Pectins serve as gelling, thickening and stabilizing agents. In the food industry, they are used for gelling and thus for the production of jams, marmalades, fruit spreads and jellies.

Pectins are natural and are obtained from apples, grapefruits and lemons in an acidic environment and subsequent heat treatment (extraction). Pectins are particularly suitable for binding fruit spreads, jams or jellies.
